Yemeni cuisine has been heavily influenced by Turkish cuisine due to the long presence of Ottoman in Yemen. The national dish is the Saltah, which is eaten at lunch. It is based on beef, chicken or lamb to which various ingredients such as rice, egg, hulbah (a sauce made from fenugreek), beans and sahawqa (a spicy sauce) are added and eaten with malooga, a Turkish bread.
