Italy is a country in Southern Europe. To the north, Italy is bordered by France, Switzerland, Austria and Slovenia. The rest of the country is surrounded by the Tyrrhenian Sea, the Mediterranean Sea, the Ionian Sea and the Adriatic Sea. The islands of Sicily, Sardinia and Elba and a number of smaller islands also belong to Italy.

The foundation for contemporary Italian cuisine was laid by Pellegrino Artusi in his famous cookbook La Scienza in cucina e l'Arte di mangiar bene. In this work he tried to summarize and revitalize Italian cuisine, among other things through the use of traditional ingredients. Artusi believed that even a poor Italy could experience the pleasure of good food. In this he was influenced by the philosophy of the cucina povera. Loosely translated, this means "poor people's kitchen". This cooking style is aimed at the full use of ingredients and is the basis of Italian cuisine.
