Goulash is the Hungarian national dish and is a soup. The heavily thickened variety is a meat stew (called Pörkölt in Hungarian - this is what is usually called goulash). There are many varieties of goulash, for example with beef, mutton, pork and fish. The latter is a very spicy variety.
